I accidentally created two tags for a character and I don't know how to delete the old one that I won't use, or at least how to edit the name to use for a different character. Can someone tell me what to do, I'm pretty new to uploading in this site.

You can simply stop using that tag and sooner or later the system will prune it. Remember that tags are exact, so if you want to use "foo" as a tag but used "foobar" by mistake before, they are different tags, so you shouldn't mind about "foobar" anymore, and if no one uses it anymore, as i said before, the system will delete it automatically.
