wheat

A domestic plant cultivated as a staple crop throughout much of Eurasia. It is a grass with hard seeds that are typically threshed and ground into flour for use in baking. Wheat flour is used to make a wide variety of baked goods, including bread, pie, and cake.

Wheat's effectiveness as a baking medium is due to a protein known as gluten, which makes flour dough soft and stretchy. Some individuals have an allergy to gluten, requiring them to eat non-wheat foods.
